Its yellowish colour, intense aroma and slightly piquant finish hold the memory of the volcanic pastures where the herds are raised, exposed to the salt of the Atlantic and the damp of the mountain.<\/p><p style=\"margin-top:16px;\">Cured for a few weeks, it develops a thin rind and a creamy interior that almost spreads at room temperature.
